Our Coco Brownie Ice Cream Sandwiches are a delightful, no-bake dessert that's dairy-free, gluten-free, and made with all-natural ingredients. INGREDIENTS
Vanilla Coco Ice Cream
1/3 C Unsweetened Vanilla Oat Milk Powder
1 C Water
3/4 C Cashews Soaked
1 tsp Vanilla Extract
3-4 tbsp Maple Syrup
Pink Sea Salt
No Bake Brownie Dough
2 1/4 C Whole Walnuts
1/2 C Cocoa powder
1 1/2 C Dates (packed and soaked)
INSTRUCTIONS
Process walnuts, soaked dates and cocoa powder until a dough forms. (Make sure there are no chunks of nuts)
Form cookie shape out of dough and freeze in the meantime
Blend all ice cream ingredients together until smooth.
Pour into mason jar lids and freeze for 2-3 hours.
Pop the ice cream out of lids and use 2 per sandwich. Add cocoa nibs to edges.
Wrap in wax paper and freeze for 15 minutes. Serve and enjoy!
Yields: 4 Ice Cream Sandwiches
OPTIONAL TIPS:
Experiment with different types of oat milk powders such as Chocolate or Salted caramel!
Use Pecans for the brownie dough instead of walnuts
Serve with fresh berries for an extra fruity twist.
